The traditional gastronomy of Ecuador has recognized prestige and motivates growth of national and international tourism. The present research aimed to analyze the influence of traditional gastronomy on the tourist demand of the Penipe canton, Chimborazo province. For this, a basic, non-experimental research was carried out that included as a universe the people who visited the Penipe canton. The main results included a predominance of national tourists, transit and whose main reason was gastronomic appeal. Corn and corn tortillas made of volcanic stone were the main exponents of traditional gastronomy identified. The majority of those surveyed considered that the gastronomic offer was very good; and they would visit the canton again to enjoy its gastronomic delights. It is concluded that the Penipe canton has tourist attractions that can promote tourism development. The traditional gastronomy of the sector has its own identity, maintains its tradition and generates tourist demand with an influx of local, national and international visitors, constituting the best form of promotion to enhance its tourism development.
La gastronomía tradicional del Ecuador cuenta con reconocido prestigio y motiva crecimiento del turismo nacional e internacional. La presente investigación tuvo como objetivo analizar la influencia de la gastronomía tradicional en la demanda turística del cantón Penipe, provincia Chimborazo. Para esto se realizó una investigación básica, no experimental que incluyó como universo a las personas que visitaban el cantón Penipe. Los principales resultados incluyeron predominio de turistas nacionales, de tránsito y que tenían como motivo fundamental el atractivo gastronómico. El maíz y las tortillas de maíz hechas en piedra volcánica fueron los principales exponentes de la gastronomía tradicional identificados. La mayoría de los encuestados consideró que la oferta gastronómica era muy buena y que volverían a visitar el cantón para disfrutar de sus delicias gastronómicas Se concluye que el cantón Penipe cuenta con atractivos turísticos que pueden impulsar el desarrollo turístico. La gastronomía tradicional del sector tiene su propia identidad, mantiene su tradición y genera demanda turística con afluencia de visitantes locales, nacionales e internacionales constituyendo la mejor forma de promoción para potenciar su desarrollo turístico.
